Many people have questions about marzipan. For those of you that are curious, we have created a collection of some of the frequently asked questions (FAQ's).

Is marzipan baked?
No - there is no baking involved.
Are eggs or flour used in the recipe?
Our recipe uses no eggs or flour.
How is the marzipan made?
Almond paste is mixed with sugar, invert sugar, and corn syrup to make the marzipan dough. The different types of sugar are used to give the marzipan the proper sweetness, texture, and the ability to be molded and painted.
How are the shapes made?
The marzipan dough is flattened, cut, and rolled into uniformly sized balls using German and Swiss machines made especially for these purposes. Each marzipan ball is then individually shaped. Pieces such as pears and eggplants are hand-rolled. Other fruits and vegetables require the use of simple shaping tools and textured boards. The more complicated shapes such as animals are pressed into food-grade silicone or metal molds.
How is the marzipan colored?
Each shape is air-brushed using USDA-approved food coloring.
Are the various shapes flavored... are oranges orange flavored?
None of our marzipan is flavored... each bite delivers only the taste of fresh almonds.
Are any preservatives used in the marzipan?
The almond paste includes a small quantity of potassium sorbate, a commonly used food preservative.
Can people be allergic to marzipan?
Marzipan contains almonds, and people who are allergic to almonds should not consume marzipan products.
How are the pieces packaged?
Items are typically placed in glassine candy cups set in plastic trays, then nitrogen-purged and vacuum-sealed in a plastic pouch, and packaged in a case.
How do I store my marzipan, and how long will it stay fresh?
Marzipan is nonperishable and needs no refrigeration. Pieces kept in the sealed package will remain fresh for 6 to 12 months. Marzipan will slowly begin to lose moisture once the plastic pouch has been opened, so the package should remain sealed until the marzipan is ready to be served or displayed. It is best stored at room temperature (68 F), 55% relative humidity, and away from sunlight. Marzipan packaged in gift boxes will have a somewhat shorter shelf life.
Is the facility inspected?
The Washington State Department of Agriculture
conducts "surprise" inspections twice yearly. Inspections are made for cleanliness and proper processing procedures, and we have always received exceptionally high marks.
Is there a minimum order size?
The minimum order size is a case, with no individual sales or mixing and matching cases.
